Sausage and Mash with Onion Gravy


One of my favorite things about London is the old and the new stand side-by-side.  Kinda like Sausage and Mash!



The buildings are incredible – and SO different!  The old stone buildings that have stood the test of time and the towering glass structures that are competing for attention….


Big Ben is such an amazing structure – imposing and a symbol of the endurance of the British Empire.


The “gherkin” is an office building that is easily recognizable as a new symbol of London. 


Then there’s the London Eye.  A Ferris Wheel that everyone associates with London Towne….a spectacular view in itself and provides you with stunning vistas of London! 


This is my favorite photo….one of the oldest buildings in London…the Tower of London and the Gherkin, the symbol the New London.


So, in keeping with the old and the new, I thought I’d serve a classic dish and update it very, very slightly.  I simply lowered the fat to give it a healthy twist, but it still is the classic bangers and mash!


I used turkey sausage and halved the amount of fat in the recipe.  Where there was all butter, I added some olive oil and I substituted some items based on what I had in stock. 


This dish is a classic for a reason…it’s delicious and can stand the test of time on it’s own! 


I think next time, I’ll update it even more and do a cauliflower and carrot mash….The original recipe is posted and my changes are in blue.



Sausage and Mash with Onion Gravy

Ingredients (Serves 5)
For the Meat
  • 5 good-quality sausages (turkey sausage)
  • 1 Tablespoon oil (2 teaspoons olive oil)

For the Onion Gravy
  • 3 onions halved and thinly sliced
  • 5 Tablespoons butter (2 Tablespoons butter plus 1 teaspoon olive oil)
  • ½ cup Marsala wine (1/2 cup Sherry)
  • ½ cup vegetable stock (1/2 cup chicken stock)
  • salt and pepper

For the Mash
  • 2 pounds potatoes, peeled and cut into chunks
  • 4 Tablespoons butter (2 Tablespoons butter)
  • 3 Tablespoons hot milk (4 Tablespoons fat free half-n-half)
  • 2 Tablespoons chopped parsley (garnish only)

Directions
  1. Put the sausages in a frying pan with the oil and cook slowly over medium low heat 20-25 minutes.  Cover the pan and turn the sausages from time-to-time (I didn’t cover).  Don’t rush the cooking – make them good and caramelized!
  2. Heat a sauté pan over low heat and add the butter and oil.  Add the onions and sauté slowly until they are well browned (about 30 minutes).
  3. Pour in the Marsala and the stock and bring to a bubbly simmer.  Continue to simmer until nice and thick.
  4. Meanwhile, bring a pot of water to boil.  Add the potatoes and cook for 15-20 minutes until they are nice and tender.  Drain and put in a large bowl.
  5. Mash the potatoes until smooth.  Then add the hot milk and butter and stir in the parsley (I didn’t add the parsley, I garnished with it). 
  6. Serve the sausages hot with the mash and gravy over all of it!

  7. Ann, who knew sausage and mashed potatoes could look so good? Your photos are great! I love the way you discribe London of the old with the new. That's often how I feel living here, you have this outstanding skyline against the sandy desert that most people would picture of the Middle East. I really love this recipe! I've got some sausages in the fridge and I think I'll do something similar but with cauliflower instead of potatoes (the potatoes here are crap for mashing!) Hope you have a great day!

  11. Its amazing how some countries really preserved their buildings and these has become such a big tourist attraction. When I was in Italy, I was mesmerised with listening to guide on the history of some of places and how many years these has stood tall.

    I will have say bye bye to the sausages and hi to the onion gravy and of course, the mash is all I feel like digging in now. You know our obsession with potatoes and the loads I buy every week.

    1. Thanks, Julia! Since you're mostly vegetarian, this would work well for you without the sausages, but they are turkey instead of beef or pork~ you'd LOVE the onion gravy!

  18. Great change-up Ann, I have a recipe for celery root and cauliflower mash which lowers the carbs even more...and it's quite yummy. One of the bogs I just read put horse radish in her mash...it's a nice twist too. I loved London for that very same reason...although we really didn't get a chance this last time 2005 to check a lot of the things out as we were staying in a small town outside of London. JT wants to go back because that's where his roots are...it's just so ridiculously expensive...

    1. You know what, I like some sausage, but not a ton. I cooked these nice and slow with some oil and they got really sticky caramelized. The mashed potatoes and gravy made a difference. ...however, you can make this dish without the sausage and I'd show up for dinner!

The "Gherkin" with the Tower of London is also my favorite shot in this set - and I completely agree that the contrast between the old and the new is what's so incredible about traveling abroad. I saw this when I visited Puerto Rico in Dec and it was the first time I'd seen any building that dated back more than 200 years... Oh, yeah, and love bangers and mash!

You know half of your pictures take me down memory lane, as I worked in London for a summer when I was in university. However, the "new" pictures of London, such as the gherkin, represent a London I just don't know. Looks like I'll have to go back!

    St. Paul's from the first picture is my favourite sight in LDN! I love how you can just walk across the Thames over the wobbly bridge to Tate modern from there. The view us breath-taking!
