This recipe is called quick bruschetta for a reason….I needed to take a nap before my Foodie Friend’s BBQ. So, I broke out the food processor, hit one of the big, shiny buttons and took a nap while the flavors got to know each other in the refrigerator!
After I woke up, I toasted the bread and topped it. It was delicious and easier to make than traditional bruschetta – and while I enjoy the chunkiness of the original – the flavors were spot on!

Everyone brought a dish and as I’m sure you guessed – I brought Bruschetta! So, when you’re pressed for time and need to make an appetizer – may I suggest you break out your food processor and try this one?
Now as many of you know, my Foodie Friend is married to The Pit Master. Here’s TRUE dedication to his craft:
The BBQ was held on a rainy, cold day – unusual for Florida. The Pit Master got up at 4 AM and put the meats on the smoker….to be served at 4:30 PM! At which time, they had to be tended regularly!

….I can tell you his time was NOT wasted! We feasted like Kings! There’s a rumor going around that next time he’s making ribs! I guess I’ll have to think of something spectacular to make sure I wrangle an invitation! Here’s the recipe:
Quick Bruschetta
CHFM Original
Print Recipe
Ingredients
- 2 cloves garlic
- 3 scallions, white and light green part, cut in 1” pieces
- 5 medium vine-ripened tomatoes, quartered
- 1 teaspoon salt
- 2-3 large (or 5 small) basil leaves, cut chiffonade
- 1 Tablespoon Extra Virgin Olive oil
- Baguette, cut into slices on the diagonal
- Garlic, peeled and cut in half
- Olive oil for drizzling
Directions
- In a food processor, process the garlic cloves until they are minced.
- Add the scallions and process again untl they are minced.
- Add the tomatoes and salt to the food processor. PULSE until it is roughly chopped.
- Pour the tomato mixture into a bowl.
- Stir in the basil and 1 Tablespoon olive oil
- Cover bowl with plastic wrap and let sit in refrigerator 2-3 hours.
- Grill, bake or toast the baguette slices until golden brown.
- When they are finished toasting, take one of the garlic clove. halves and lightly scrape it on the top side of each slice of bread.
- Top with the tomato mixture, divided evenly among the slices.
- Drizzle with olive oil and serve immediately.

I always use chopped tomatoes for my bruschetta. Guess I should give them a good grind the next time round .. Your first pic looks absolutely gorgeous.

ReplyDeleteHi Ann! Your friend reminds me of my friend who smokes great ribs! I'd cook anything to be invited when he smokes meats in summer. ;-). I like that you took a nap while flavors were being meld together. I usually need easy version of everything so this is perfect. Now that I saw smoked meat....I should call up my friend! =)

Estrella - that makes sense...this recipe I developed after living in Sicily for 3 years. It's the first time I used the food processor, but it sure did make it easy!
DeleteBruschetta is so versatile. I made my first bruschetta from a recipe found in Bride's magazine if that tells you how long ago that was! We judge any new Italian restaurant on its bruschetta.
ReplyDeleteThis looks perfect. Everyone always loves bruschetta with tomato concasse on top. I add a touch of balsamic in mine although I've never put mine in the food processor, I've always done it by hand. I'll have to try that, it would definitely save time.

I bring bruschetta to parties often too! Everyone loves it and it's pretty easy to throw together! Heck, I could make a meal out of just bruschetta and would be very happy!
