Roasted Garlic Mashed Potatoes


As many of you know - I try to eat as healthy as possible. When the holidays come up....I love mashed potatoes!  I also enjoy them in a variety of ways.  This recipe is healthy, tasty and CREAMY!


When I read this recipe in Dara Reppucci's cookbook, "Gen Y Foodie holidays", I knew this one would make it to the table!


The potatoes were easy to make.  She kept the peel on - which is just more nutrients and less work!  They were hand mashed and then set on the stove to stay warm and allow the milk to absorb.  




The only time involved is roasting garlic, which - to be honest - isn't work at all to me!  Roasting garlic is a thing of beauty!  


So, this one was a winner and a HUGE hit!  I had friends over for dinner and we served two roasted chickens, these potatoes and carrots.  The carrots will be posted tomorrow.  Everyone enjoyed themselves and the potatoes were gobbled right up!




Once again, as this is a review, I've posted the recipe exactly as it appears in the book and made it without any changes.




Roasted Garlic Mashed Potatoes

Ingredients
  • 3 pounds red potatoes, scrubbed and cut into quarters
  • 2 heads of garlic
  • 1 cup skim milk
  • 1/2 cup grated Parmesan cheese
  • 2 Tablespoons black pepper
  • 1/4 cup fresh chives, chopped
  • 1 Tablespoon sea salt
  • 2 Tablespoons extra virgin olive oil
Directions
  1. Preheat oven to 425F.  Slice the top 1/2" off the top of each head of garlic.  Drizzle olive oil over each one and roast for 20-25 minutes.  Set aside
  2. In a saucepan, bring potatoes and 2 quarts of water to a rolling boil.  Boil potatoes for 10 minutes or until fork tender.  Drain and set aside.
  3. Return potatoes to pot, season with salt, pepper and milk.  Using a small fork, remove each individual garlic clove from the husk and add to the pot.  Using a whisk or potato masher, mash potatoes to your desired level of smoothness.  Add cheese and stir.  Simmer on low heat for 10-12 minutes and serve with fresh chives.

  5. Adding the roasted garlic is just brilliant. Roasted garlic cloves are so smooth and delicious, I can only imagine what it would do for the mashed potatoes. DEFINITELY trying this Ann, I'll let you know how it goes!

  13. I made the Mash from this recipe yesterday between me and my wife we ended up finishing the plate! it is truly lovely.. Dont think i will be making it again any time soon though it is way to addictive! i will end up having to buy all my clothes from http://www.biggerland.co.uk

  24. I usually prepare mashed potatoes as garnish, but in this way mashed potatoes are a dish with its own entity. I'll prepare it tomorrow perhaps with apple.

  28. I love mashed potatoes too, Ann; I've been trying to reduce the potatoes and add something less carby like roasted celeriac (which is a fraction of the carbs of potatoes). I love the addition of the parmesan cheese. And roasted garlic is always a winner. How is your success going? I'm rooting for you!

  49. I'm shuddering all over with yum. Creamy mashed potatoes are already divine, but adding roasted garlic makes it double heaven.

    I've never actually roasted garlic myself . . . but, hey. Now that I can make my own chicken stock, roasting a little garlic should be a snap ;~)

    This mashed potatoes would definitely not be short of flavours and aromas as I can imagine how the roasted garlic will impart so much taste into the mash! I can eat roasted garlic on its own too for its sweet creamy taste.
